This avocado toast recipe with microwaved poached eggs is so simple and healthy it's sure to become a breakfast staple. It's packed with protein and heart-healthy fats.

Searching for a quick-and-easy protein-packed breakfast recipe that will power you through the morning? Avocado toast with microwaved poached eggs is the answer.

You've probably heard that, aside from being Instagram-worthy, avocado toast is a meal with heart-healthy monounsaturated fats, vitamins, minerals and dietary fiber. But if you add a poached egg, you now have a breakfast or snack that's also high in protein (12 grams), vitamin D and choline.

In the video above, we show you how you can make a poached egg in the microwave in one minute flat. The yolk will be runny and the whites will be perfectly firm and set. (You may need to adjust the amount of time you cook the egg, depending on the strength of your microwave.)
