This Keto-Friendly Cauliflower Quiche Is Gluten Free

This quiche is high in protein, and thanks to the cauliflower crust, it's also gluten free and low carb.

So you love buttery pastry crust, but you're body doesn't love gluten. How do you satisfy your crust craving?

Make this irresistible quiche, which features a gluten-free, golden-brown crust made from cauliflower rice, egg whites, Parmesan cheese and nutritional yeast.

For the quiche filling, simply combine choline-rich eggs with spinach, mushrooms, feta and artichoke hearts — or customize it with whatever ingredients your heart desires. (Another favorite combo of ours is bacon, sauteed shallots and Gruyere cheese.)

One serving of this quiche contains 17 grams of protein, which will help keep your hunger in check throughout the day. It also contains three grams of fiber, a nutrient that plays a major role in digestive health.

The cauliflower rice used for the crust is nothing more than cauliflower broken down into rice-size pieces using a food processor, then simmered or sauteed until soft. The cauliflower rice in this quiche recipe allows for a reduction in carbs and no gluten, plus benefits like fiber, vitamin C, potassium and folate.
