Snow peas are delicate peas with edible pods. They have a crisp, mild flavor that blends well with other flavors in vegetable medleys or stir-fries. Snow peas can be prepared a variety of ways, including steaming, stir-frying or boiling. Snow peas need to be boiled only for 30 seconds to 2 minutes, which is just enough to make them tender. Snow peas are a good source of vitamins A, C and K, as well as iron. A full cup of cooked snow peas contains only 67 calories.

Pull the strings at the seams of the snow pea pods and discard them. These are tough and not edible.

Pour 8 cups of water into a stockpot and bring it to a boil over high heat.

Add 2 teaspoons of salt, if you are using it, to season the pea pods and bring out their flavor.

Place the 2 cups of pea pods in the boiling water. Boil the snow pea pods for 30 seconds to 2 minutes, or until they are crisp but tender enough to chew easily.

Drain the pea pods and serve them hot, or allow them to cool for a fresh and sweet side dish.

Tip

Fresh snow peas will last up to 2 weeks in the refrigerator.
